Just making something to accompany my cider tonight. Even non cooks like me can do this and it tastes fab. Gypsy casserole 1.5 lb of pork belly 3 medium onions 8oz of small pasta 2 oz of Demerara sugar Two stock cubes Vinegar Tomato purée Chilli powder Salt n pepper Casserole dish. HERE IS HOW TO PREPARE IT... Cut pork into cubes ish and put in casserole dish Chop onions Add pasta Add both to the dish and stir up. STOCK... Measuring jug. Add 2 oz of Demerara sugar Add two stock cubes Add two level tablespoons of tomato purée Add two level table spoons of vinegar Add a good pinch of chilli powder and salt n pepper mix with a pint or so of hot water stir well and pour over meat and onions to cover Put lid on dish and put into oven at 180 degrees for 90 minutes or so. Eat like a stew. It’s lovely and doesn’t spoil the cider. Bon appetite. M
As far as I know, real Gypsies don't mind being called Gypsies. However, if it's a problem there are loads of pubs called the Traveller's Rest where you can drink your cider with a clear conscience!
