    Chicken Tikka pitta with easy mint raita

    Shamelessly stolen from CamperJam a few years ago but still fab none the less.

    For the Chicken Tikka:
    Cut up however many chicken breasts you require and place the meat on skewers.
    Coat the meat in Pataks Tikka Masala Paste, leave to marinate if you have time or just stick them on the barbie.
    While that cooks move on to make the raita

    For the Mint Raita
    Open one small tub of natural yogurt and add mint sauce to taste. It might sound awful but it was pretty good [​IMG]

    To assemble:
    Toast the pitta on the barbie to warm up.
    Add the chicken, raita and any salad you wish.

    Easy peasy
     
  3. Tonight Matthew I'm going to be cooking paella, more Cornish via Spain really

    For two

    bbq/fire pit
    wood
    a handful of Bomba paella rice
    1 large onion, finely chopped
    2 garlic cloves, finely chopped
    olive oil
    1/2 tbsp of sweet smoked paprika
    big pinch of saffron
    1 red pepper or 2 small yellow/red peppers
    1 chilli
    green beans
    2 large tomatoes or a handful of small ones, de-seeded and finely chopped
    stock
    olives
    clams and mussels
    chorizo, diced

    Fire up the bbq/fire pit with wood (not used charcoal so don't know how it would be) when the wood is hot but not too high with flames pop on a paella pan or heavy bottomed pan.

    Toast the saffron and put in the stock. Cook the chorizo, reserve the oil in the pan and put the chorizo to one side.

    Cook the onion in some olive oil and the chorizo oil till soft but not browned, add the garlic and the paprika, stir like billy-oh, don't let it stick and add the rice, tomatoes and whole chilli, stir everything and the rice will start to become opaque. Add the stock and stir again. Don't stir again!

    Scatter the chorizo on top and arrange the beans, place the whole chilli in the middle and add stock when the the rice looks like it's beginning to go dry, test every now and then, adding more stock as needed.

    Move the pan to a cooler part of the fire if it's boiling away too hot or to a hotter part if it's not bubbling as it simmers. Put on some kindling/smaller pieces of wood if you need a more concentrated flame.

    About 5 minutes before the rice is done, arrange the clams and mussels. When the clams and mussels open up it's done!

  4. Sausage Sandwich.

    • Fry sausages, (any will do)
    • Butter Bread.Put sausages in bread.Cut in to triangles (not squares you weird numptys)

  5. veryyyyyyyyyyy very cheap and quick dinner for students, people in campersm and tight blighters like me only joking , i like this cause its very simple and cost 65p

    broth what ever
    put in a packet of the 10p noodles stirr
    pour
    and eat owen nw
     
  6. Cowboy Hash & mashed potatoes or rice
    serves between 4 & 6 people depending how greedy you are:-
    You will need:-


    For the hash:-

    500g of Minced beef (or Quorn if your one of those wierd veggies)
    2 onions
    2 cloves of garlic (you can omit this if you'd prefer)
    2 Oxo cubes (other stock cubes are available, like smart price if your a tight wad)
    200 Ml of boiled water
    2 Table spoons of tomato puree
    2 tins of Beans & sausages
    Salt to taste.


    Method:-
    Defrost & Fry the mince until the colour changes, drain & remove from the pan & set aside
    Chop the onions into quarter rings then Fry until they start to soften
    Finely chop or crush the garlic & add to the onions
    Add the mince that you set aside earlier (make sure its drained now)
    Crumble the Oxo cubes into a jug containing a 200 Ml of water, then add to the pan
    Add the tomato puree & stir
    Add the 2 cans of Beans & sausages, make sure you open them first & dispose of the cans in an environmentally friendly way, a passing Piky will happily take them off your hands (other scum bags are available)
    Stir it all & simmer until piping hot.


    For the mash:-
    6 to 8 large potatoes
    100 Ml milk
    knob of butter
    salt to taste usually a pinch is fine


    Method:-
    Peel chop & boil the potatoes until soft, the smaller they are the quicker they boil
    Drain & mash in the pan
    Add the milk & mash again
    add the butter & salt & mash again serve while hot
    If you prefer you can omit the butter & milk & still in 125ml of double cream
    You could also add grated cheese to the mash while its hot or even stir an egg into it, then reheat.


    If i need to tell you how to boil rice then put away your kitchen utensils & drive to Mc'donalds (other junk food establishments selling rubbish are available)
     
  7. cant beat a nice fresh steak on the bbq, we love it with a nice bit of salad also a nice hot frying pan that you dont mind getting a bit black on the flames onions thinly sliced straight into the hot pan mmmm frying onions :p now a splash of red wine into the onions...its open now just as well finish it off ;) keep the onions frying until dark red in colour and crispy :p now take those onions off and add a little olive oil to that frying pan in with some mushrooms, spring onions, red and green peppers quick fry these until done to your liking.


    Next some nice beef eater tomatoes, scrap out the inners try not to damage the outter, put that in the pan to heat through, now fill the outters of the tomatoes with this mixture. place the steak on a bed of green salad, the filled tomatoes next to it with the crispy onions on top mmmm delish and not very fattening unlike chips ;D Enjoy campers
     
  8. Tex-Mex Breakfast Burritos

    This is cheap, easy and great when camping. Serve them wrapped in paper towels and all you will have to wash afterward is one skillet and one big spoon.
    I won't complicate things with details like measurements. Like any other kind of burrito, the ratio is a matter of taste.
    Ingredients

    Chorizo sausage for authenticity, but any breakfast sausage will be fine.
    eggs
    potatoes
    diced bell peppers and onions
    salsa
    mozzarella and/or provolone
    Tortillas
    your favorite hot sauce

    Prep what you can at home to save time and effort during your trip. Bake the potatoes and dice them. Dice the peppers and onions. Ziploc bag it, toss everything in the cooler and hit the road.

    I often aim for equal parts eggs-potatoes-sausage, but it really doesn't matter. They're different every time I make them and they're always good.

    Crumble and brown the sausage in a large skillet with the potatoes. Add the peppers and onions. Once all that gets well on it's way (when the smell starts drawing your family out of their sleeping bags) add the eggs and salsa. Flip, fold, futz, and stir until the eggs are scrambled and everything is fully cooked and blended. Add the cheese, stir, turn off the stove and let it melt. Spoon it onto your tortillas, roll them up and eat them.
    Hopefully you have made way too much. Throw it in the cooler. It will reheat wonderfully throughout your weekend for quick snacks or an even faster and easier breakfast tomorrow. After a fair share of beer and sunshine, what the Hell, it's even good cold.
     
  9. Bacon and Cherrys.


    Sounds weird, but trust me they are AMAZING!!!!!


    Simply wrap bits of smoked streaky bacon around Glacé cherrys. use cocktail sticks to hold the bacon in place.
    Place over hot coals until the bacon is cooked.


    Eat.


    I guarantee you'll love them ;D

  12. me ma s irish stew big bag of spuds peeled quartered in a pot with small amount of salt 2 big onions cut chunky, 2 big carrots sliced , 1lb of mince pieces rolled in your hand to make balls , dropped in the pot boil for 10 minutes add 2 oxo cubes turn down the heat put the lid on 15 minutes later, beet it down yer neck , nice with brown sauce , ::) ;) ;)
