January Meal of the Month : Time to vote folks!

  1. Ok, so here it is, the first month of a brand new year and who will win some k+ :thinking:

  2. 1. Bertiebot's Chicken, Aubergine and Pea Pilaff

    Here is a dead easy, one pan recipe for chicken, aubergine and pea pilaff. Bit of a family favourite.

    1 1/2 tb sunflower oil
    1 small onion chopped
    1 aubergine cut into 1.5 pieces
    6 chicken thigh fillets, cubed
    2 tbs mild curry paste
    250g long grain rice
    500 ml chicken stock
    150g frozen peas
    3 tbs chopped coriander

    Heat 1 tbs oil in the pan and saute the onion and aubergine till golden, about 8 mins. Set the vegetables aside and add remaining oil with the chicken to the pan, season and fry for 5 mins until browned. Return the onion and aubergine to the pan.
    Add the curry paste and rice, stir for 1 minute, then add the stock. Bring to the boil, then reduce the heat to a slow simmer. Cover and cook for 10 mins, then add the peas and cook, covered for a further 5 mins. Take off the heat and set aside for 5 mins, then stir in the coriander and serve.

    Tastes better when cooked in a camper too!

    2. Rickyrooo1's Casserole Thing

    i made the most silly mix for a "casserole thing" and it was really nice
    i fried some mince put onion mushrooms red/green/yellow peppers tomatoes in a casserole dish and bunged a steak in ale sauce over it and whacked it in the oven for 1 &1/2 hours and it was gorgeeeeeeeeeee.


    3. 72wilma's Blueberry Cheesecake


    Here's the blueberry cheese cake I made for yorkshirecampers and paley's fantastic party, thanks to Dubweiser for pointing me in the direction of the recipe which I promptly ignored and improvised with what we had in the cupboard :)

    150g blueberries
    2 tbsp soft brown sugar


    packet of ginger biscuits (we had posh spiced ones for Christmas left over)
    50g ish melted butter


    500g mascapone
    4 tbsp double magnolia
    4 tbsp Greek yoghurt
    4 tbsp icing sugar and more to taste
    1 very large lemon, or 2 smallish lemons zest and juice

    Put the blueberries and sugar into a saucepan and bring slowly to boiling point, occasionally stirring and simmer for about 2 minutes, put to one side and let it cool completely.

    Normal drill for a cheesecake, crush the biscuits (pop into a strong plastic bag and bash with a rolling pin or blitz in a blender) add the melted butter to make the sort of sand and water mix you need for a descent sandcastle. You might need more butter depending on the biscuits you use.

    line a cake tin (20cm) with greaseproof paper and pack the biscuit mix in and smooth with the back of a spoon or a small glass. Chill in the fridge.

    Beat the mascapone, magnolia and yoghurt, add the 4 tbsp of icing sugar, lemon juice and zest and then taste, it might not be sweet enough for you, add some more, I like cheesecakes to be a bit tart.

    Spoon the cheesecake mixture on top of the biscuit base, smooth and put in the fridge to chill.

    When you want to serve, swirl the blueberries on top.


    4. Terrordale's Campfire Stew


    Campfire Stew

    Ingredients
    1 LB Bacon - Diced
    2 Onions - Large
    3 TBSP Garlic - Crushed
    2 LBS Beef, Chicken or Pork - Cubed
    6 Pack Newcastle Brown Ale (Or Water)
    2 Bay Leaves
    4 TBSP Worstershire Sauce
    Salt & Pepper
    2 LBS Potatoes
    1 LB Baby Carrots
    1 Cup Capsicum - Diced

    Preperation Method

    Brown diced bacon in Dutch Oven.
    When brown add onions and garlic, saute until onions are translucent.
    Add cubed meat of your choice and brown thoroughly.
    Add beer (Or water) to almost fill dutch oven.
    Add bay leaves, worstershire sauce, bay leaves and Salt & Pepper to taste.
    Cover and slow cook over hot coals for approx. 2 hours.
    Check liquid levels and make sure to keep plenty of liquid in dutch oven. (& in the cook)
    When meat is almost tender, add potatoes, bell peppers and baby carrots.
    Cover with liquid of your choice (Beer, water, wine, etc...) Cook until potatoes are tender.
    Serve with salad, rice, pasta or even just by itself.

    5. LMPD's Chick Pea Dahl

    2 medium onions
    2 cloves of garlic
    thumb size piece of ginger
    tsp cumin
    tsp groung coriander
    tsp garam masala
    tbs curry paste
    2oz red lentils
    3/4 pint of stock
    tin of chopped toms
    tin of coconut milk
    tin of chick peas
    juice of a lemon
    salt and pepper
    chilli to taste (red or green)

    Chop your onions, garlic and ginger and soften for five mins. Add your spices and paste - cook for a minute. Stir in your lentils, then add your toms and stock and let it cook for ten mins with the lid on. Pour in the coconut milk, stir it, put the lid back on and leave for another ten mins. Put your chick peas in, add a pinch of salt and pepper and as much chilli as you think you can handle and Bobs your uncle!!!
    6. 72wilma's Chilli sweetcorn soup


    1 tin creamed sweetcorn
    1 medium onion
    1" piece of ginger (I used pickled ginger with chillies)
    2 cloves garlic
    1 red chilli
    veg stock (I used Bullion powder)
    cornflour
    1 egg
    salt and pepper to taste
    Hot chilli sauce (Linghams)

    Chop the onion, the ginger and the chill, crush and chop the garlic, all very finely.

    Add to a bit of oil and sauté while you boil a kettle and open the can of sweetcorn. This can take 5 minutes if you are feeling a little 'challenged' after a night of partying ::)

    Add the sweetcorn and simmer for a while and add 1 tsp of Bouillon powder and a canful of hot water. At this point you could add crab meat or shredded cooked chicken. If you're adding meat or fish cook on a good heat for about 10 minutes. Turn down the heat and simmer a little longer and add a tsp of cornflour mixed with a bit of cold water to thicken up the soup.

    Beat an egg really well and drizzle into the hot soup to make eggy ribbons.

    Add salt, pepper and more chilli sauce to taste. >:D

  6. I can't decide! I made your soup which was lovely but Terrordales has posted a dutch oven recipe which I've drawn inspiration from and then Ricky has posted a (sort of) recipe too which is very impressive and the other things sound gorgeous too.
