January meal of the Month

  6. obviously no-one's eating this month, which, having met quite a few of you I know is definitely not true!!!

    so come on, only a few days of January left and you win some lovely k+ fo each recipe posted and more for the winner

    Terrordales Nightshift

    Campfire Stew

    Ingredients
    1 LB Bacon - Diced
    2 Onions - Large
    3 TBSP Garlic - Crushed
    2 LBS Beef, Chicken or Pork - Cubed
    6 Pack Newcastle Brown Ale (Or Water)
    2 Bay Leaves
    4 TBSP Worstershire Sauce
    Salt & Pepper
    2 LBS Potatoes
    1 LB Baby Carrots
    1 Cup Capsicum - Diced

    Preperation Method

    Brown diced bacon in Dutch Oven.
    When brown add onions and garlic, saute until onions are translucent.
    Add cubed meat of your choice and brown thoroughly.
    Add beer (Or water) to almost fill dutch oven.
    Add bay leaves, worstershire sauce, bay leaves and Salt & Pepper to taste.
    Cover and slow cook over hot coals for approx. 2 hours.
    Check liquid levels and make sure to keep plenty of liquid in dutch oven. (& in the cook)
    When meat is almost tender, add potatoes, bell peppers and baby carrots.
    Cover with liquid of your choice (Beer, water, wine, etc...) Cook until potatoes are tender.
    Serve with salad, rice, pasta or even just by itself.

  13. need time away from work stuff first! (btw, if anyone asks I'm 'working' ;))

    hopefully this weekend, it's already pre seasoned but planning a bit of a frying session to get it 'right'
     
  14. We bought some pork loin to roast but didn't get time to do it. Will let you know how we get on...
