Lmpd's Colcannon

    O.K. here we go then, with St. Patricks day just around the corner, hows about the Irish favourite, Colcanon?


    Basically its just bubble and squeek - mashed potato and steamed/boiled cabbage combined, here's the difference, take a huge handful of chopped chives and bring them to the boil in half a pint of milk, then stir into the mixture with a pinch of salt and pepper and hey presto job done, serve with sausages and onion gravy and a mahoosive glug of Bushmills whiskey!!!

    Chop two onions and soften them in a 1oz of butter and 1 tablespoon of olive oil, before they go brown add 1 tablespoon of sugar and 2 tablespoons of balsamic vinager, after a minute or two add three quarters of a pint of stock, while that does its thing, put four teaspoons of cornflour in a glass and mix with a little cold water, pour into the pan and it should all start to thicken up, give it a good old stir and pour it on your colcannon.
