Birdy's Piedmont Peppers Red or yellow peppers topped with goats cheese, rocket salad and balsamic vinegar. Slice the peppers into quarter and gut. Slice a tomato. Top both with goats cheese. Grill slightly. Place on a bed of rocket salad and drizzle with balsamic vinegar.
