Granola

  1. Today I knitted this ;D

    to be fair I made my own granola as I was a bit miffed at paying £4 plus for breakfast cereal :eek:

    I adapted the recipe to what we had in, so it was a bit different than the original ;D


    500g rolled oats
    100g sunflower seeds
    100g pumpkin seeds
    175g apple sauce or apple compote (I used 1 very small jar of apple butter so I didn't use the cinnamon as it already had it in) need to put that recipe up :)
    2 tsp ground cinnamon
    1 tsps ground ginger (I used crystallised ginger)
    120 gram(s) brown rice syrup or rice malt syrup, or failing that golden syrup (I used malt syrup)
    2 tablespoon(s) clover honey or other runny honey (about 2 big squeezes from a squeezy bottle)
    2 tbs/ 2 squuezes of maple syrup
    100g pecans
    1 teaspoon(s) Maldon salt
    2 tablespoon(s) sunflower oil
    300 gram(s) Raisins (I used chopped dried dates)


    Mix everything except the raisins/dried fruit together very well in a large mixing bowl. It was really sticky!
    Spread this mixture out on two baking tins (the sort that come with ovens, and are about the width of a rack) and bake in a gas mark 3/170°C oven, turning over about halfway through baking and move the granola evenly during the baking process. It needs to be evenly golden without toasting too much in any one place. It can take anything from about 40 minutes to about an hour.
    Once it's baked, allow to cool and mix together with the raisins/dates. Store airtight. It made tons of the stuff!

  2. wow...i really like that idea....i like granola but im diabetic and its a bit sweet not to mention expensive ....i used to love flapjacks but they are ay too sweet...maybe this is the solution. cheers
     
  3. You'd have to be careful of the fructose content, not much added sugars but the apple puree will be high GI :eek:
