Bit boring today , just making a big steak n kidders pie , but im cheating n using bawt puff , sunday dins no roast day so ,you wont need a recipe for this one.
Rabbit Stew with Dumplings DUMPLING INGREDIENTS 400g self-raising flour 200g butter bunch of chives, finely chopped salt and pepper milk FOR THE STEW 2 rabbits, jointed (go free range! more meat, less tough) plain flour olive oil butter salt and pepper 10 rashers bacon/prosciutto/smoked ham 2 sprigs fresh rosemary 350g mushrooms (pick a range, or plain buttons will do) 1 onion, cut into quarters 1 (750ml) bottle Tooheys Oldor other dark beer 3 cups (750ml) chicken stock Use about 28cm deep oven safe pot/dish HOW TO PREPARE & COOK IT Heat your ovenproof pot on the stove with a little olive oil and a small know of butter. Whilst it's warming, you want to start to coat your rabbit pieces with flour, shaking off any excess. Once the dish is heated, cook the pieces a few at a time until they're golden on all sides. When the final batch is done, return all the pieces to the dish with the bacon, and continue to cook until the bacon starts to colour a little, about 5 mins. Now add the rosemary sprigs, the mushrooms, onion, the bottle of Tooheys (save a mouthful for yourself) and the chicken stock. Stick the lid on and let simmer for 30 mins, and turn your oven on to preheat - 180 degrees C. Whilst the stew bubbles away, make your dumplings! Rub together the flour, butter and chives and a hint of salt and pepper, until the mix is like light yellow breadcrumbs. Add some milk to bring it together, and knead until smooth - takes only 2 mins! Separate the mix into 18 portions (I find this easy by halving, the quartering, and eigthing etc etc). Roll up into little balls, and if you've sometime still to wait for the stew, stick into the fridge. Once the 30mins is up, take your stew off the stove and evenly distribute your dumplings on top. Drizzle with some lovely olive oil, and pop in the oven for 45 mins. The dumplings will out a bit and suck up all the lovely stew juices underneath, but will be a little crispy on top. Serve in warmed bowls, or over some steamed spinach or peas. This should serve 6 people depending on how hungry they are.
Bacon Porridge 1. Grill bacon until crispy and crumble in to small pieces. 2. Cook up some porridge oats in a saucepan, (not a microwave). 3. Crumble bacon on to top of porridge. 4. Top with maple syrup. Eat.
Today ive done a winter warmer , Chicken n chorizo casserole. Half a chicken cut into chichen leg ,thigh,and breast in half 3" ow er of chorizo cut into 1/4" lengths Large corgette sliced Large onion sliced into rings Large carrot sliced large parsnip sliced 2large chesnut mushrooms sliced I stick of celery sliced half red pepper sliced 1/4 large swede sliced 1/2 TIN of plumb toms with juice Put all above into a casserole dish with lid 1 n 1/2 knorr chic stock cubes disolve with boiling water then add tom juice in a mug SEASON salt pepper n aromat, large sprinkle of mixed herbs , pour over mixture till comes 3/4 way up dish , put in oven on low 110 /120deg stick in oven for 1hr 3o /40 mins till smelling yum serv with tatoes n broc or cabbage. Nice tasty change for sunday dins cooked pic to be added later.nice n tasty.
Tip on this one make more than you can eat at one sitting , with left overs make a nice curry rue and stir in for a nice tasty veggy curry ,with meat if you want it add more meat /chicken .
